Realistic because it is tested in real chocolate and extensive because all PGPR batches are tested for functional performance. Due to this unique set-up, we can guarantee a high and stable functionality from delivery to delivery. This approach has high value for chocolate producers as it gives them confidence Viscosity Reducing Power (VRP) The highly valued constant performance in chocolate and compound products is secured on batch level by using the performance test named viscosity reducing power (VRP). Each batch is tested in a standardized chocolate securing that it always meets the well known unique Palsgaard standard. in a stable and superior performance of each batch of delivered PGPR. Palsgaard is the only company worldwide who makes this critical testing in real chocolate and it is part of the reason that Palsgaard has a strong market leading position in chocolate emulsifiers. Unique constant monitoring Palsgaard has developed and optimized its VRP method over many years. We use high quality rheological instruments, experienced personnel and standardized methods as only this set-up will create trustworthy and valid measurements. High performance Palsgaard has created the true market leading PGPR product as a consequence of many years of research and optimizations in real chocolate applications. The result is Palsgaard® PGPR 4150 - a highly functional, stable and flavour neutral PGPR, which can be added at a lower dosage than standard PGPR giving optimal flow properties of the chocolate mass. The higher performance may also be utilised for further reduction of the fat content of the chocolate at a given dose of PGPR. Depending on product development needs for large cocoa butter savings or adaptations to legal requirements, Palsgaard® PGPR 4150 may be the best choice due to a dramatic effect at very low dosages. This figure illustrates the superior yield value reduction of Palsgaard ® PGPR 4150 compared to a standard PGPR. A unique yield value reduction of approx. 80 % is achieved. This figure shows the superior batch-to-batch stability of Palsgaard ® PGPR 4150 monitored over 12 months. It shows a minimum variation under practical conditions giving the customers the guarantee that Palsgaard ® PGPR 4150 always brings a high and stable viscosity reduction under practical conditions. In order to ensure constant functional properties of Palsgaard PGPR 4150, all batches are checked in a chocolate system using high quality rheological instruments.
