This combined with excellent tolerance to challenging factors such as heat, cocoa and other ingredients makes Emulpals 110 ® Guaranteed performance At Palsgaard, we take a unique approach to ensure the reliable performance of our products. The highly valued constant performance of all of our Emulpals® products is secured by using a practical aeration and baking control test (ABC test) under very standardized conditions. This unique method maximizes the reproducibility and validity of our tests by standardizing and excluding effects of disturbing factors. The stability of Emulpals® is therefore tested in a realistic and extensive way. Realistic because it is tested in real cakes and extensive because all our batches are tested for functional performance. Due to this unique set-up, we can guarantee a high and stable functionality from delivery to delivery. Figure 2 shows the test results of 867 individual batches of Emulpals® 110. The aeration power of these batches shows a very small variation and it is always within the narrow performance limits set by Palsgaard. the obvious safe choice for producers of cake mixes. Figure 1 shows the test results of Emulpals® 110 over a storage period of 2 years. The result shows excellent stability and no loss of functionality. This gives the user high security for excellent performance even after a long storage time. The 2 years is a record in the industry and competitive products often have a shelf-life of only 6 months or 1 year.
