Palsgaard ® ExtruIce 304 is a lean label solution which provides all the functionalities expected from a conventional emulsifier and stabilizer solution: • • • • • • improving whipping properties improving texture improving stand-up properties of extruded type ice cream improving melting resistance modifying the sensory attributes of ice cream preventing ice crystal growth during storage One additive Palsgaard® ExtruIce 304 is produced with only one additive, which is mono- and diglycerides and one food ingredient, which is very much accepted by consumers. This opens up the opportunity for manufacturers of ice cream to produce more lean label products. Cost savings & stability A further advantage of using Palsgaard ® ExtruIce 304 is that it provides an attractive cost-in-use calculation. No added hydrocolloids means that manufacturers of ice cream will avoid the relatively high cost for such ingredients as well as the risk of the high price volatility that has been seen for some hydrocolloids over the last years. Shorter declaration With fewer additives comes a much shorter declaration and a more transparent and clear ingredients list on the finished packaging.
