Palsgaard ® ChoMilk 173 – maximum versatility " Palsgaard ® ChoMilk 173 is a great tool for innovative products offering the possibility of health claims, simplicity and cost savings " Versatility The unique functionalities of Palsgaard® ChoMilk 173 creates a three-dimensional network that is capable of stabilizing and suspending various types of particles in different types of dairy drinks. Palsgaard® ChoMilk 173 is therefore a product offering great innovation potential. Apart from standard chocolate milk where Palsgaard® ChoMilk 173 works excellent in both cold and warm filled products, it particularly shows its superior qualities in the following product categories: 2 Coffee milk drinks Coffee milk drinks and coffee/chocolate milk drinks are becoming increasingly popular all over the world. Due to the acidity of the coffee it is often necessary to stabilize the proteins. Furthermore, it is common to combine coffee drink with cocoa which is why stabilizing the particles in the drink, to obtain a homogeneous product, is necessary. Palsgaard® ChoMilk 173 keeps the coffee drink stable throughout the product shelf life and at elevated temperatures. At the same time it stabilizes particles in the product coming from e.g. addition of cocoa powder. 1 Dairy drinks with low protein content Palsgaard® ChoMilk 173 does not react with milk proteins in the same way as a standard emulsifier and stabilizer solution for chocolate milk. It does not need the proteins at all to create the network that will keep particles in suspension. This makes Palsgaard ChoMilk 173 a natural choice when ® producing chocolate milk drinks with a low protein content – either due to a low protein content in the milk or when extra water is added to the end product. Trials have shown that by adding 0.20% Palsgaard® ChoMilk 173, it is possible to replace approx. 50% of the milk used in the production of chocolate milk with water and still achieve an outstanding result. Since proteins are the most expensive part of the milk, Palsgaard® ChoMilk 173 therefore offers you great opportunities for cost reduction in your final recipe. 3 Low calorie dairy drinks With Palsgaard® ChoMilk 173 you can produce dairy drinks with a reduced sugar content. The special composition of Palsgaard® ChoMilk 173 is able to substitute the dry matter normally received from sugar so you can avoid using sugar in your formulation and just add sweetener instead. This opens up the opportunity for producing and offering more healthy and innovative dairy drinks.
