Flexibility in margarine production has up until now been limited due to the need for melting the emulsifiers. Add to that increasing consumer demand for lecithin-free, non-GMO solutions and increasing consumer awareness of the salt content in food products, development of house-hold margarines are becoming increasingly difficult. With Palsgaard® Citrem 3212 this is all history. New emulsifier in liquid form Palsgaard® Citrem 3212 is one of Palsgaard’s new generation of liquid emulsifiers. First of all, liquid emulsifiers add flexibility to your production – but they also enable you to use liquid emulsifiers in fat systems with very little dependency on melting-up emulsifiers. The liquid form makes it easy to handle in production as it is easily added to the emulsion. The newly developed Palsgaard® Citrem 3212 is a liquid emulsifier with only one E-number developed for multipurpose household margarines for frying and baking. It may be combined with unsaturated mono-diglycerides for reduced and low-fat solutions as well. Typically emulsifier systems for frying margarines will be lecithin based, or they contain several E-numbers. But for Palsgaard® Citrem 3212, neither hydrogenated fat, palm oil nor soy lecithin is included in the fat sources as this new emulsifier is based on sunflower oil with a high content of oleic acids as lipid source. This gives Palsgaard® Citrem 3212 a high content of monounsaturated esters. In addition, Palsgaard® Citrem 3212 shows very good anti-spattering behaviour as well as good baking results for household needs. The margarine can be in both liquid or brick form. Palsgaard® Citrem 3212 Palsgaard® Citrem 3212 is a citric acid ester (E472c). Directive 95/2/EC and Regulation (EC) No. 1333/2008 cover the use of additives in food supplements. According to both, E472c may be used in food supplements at QS level, which means as much Palsgaard® Citrem 3212 as you need in the recipe. Only 1 E-number Palsgaard® Citrem 3212 shows excellent anti-spattering results and works well in both liquid and brick margarine.
