From the inventor of the modern emulsifier Customer-driven development Although Palsgaard invented and patented our activated cake emulsifiers well over 40 years ago, we haven’t been resting on our laurels. Using the extensive capabilities of our research and development organisation, Nexus, we constantly seek to develop new versions not only of Emulpals®, our series for mix products and our Palsgaard ® SA series for industrial cakes but also of other types of emulsifiers for various applications. Our research and development activities reflect a doubleedged approach to innovation: We do more than simply adjust the formulation of existing emulsifiers to fit the needs of our customers – we also develop new ones from scratch and help customers implement them into their recipes. 4 Putting it all together R&D projects often involve both Nexus scientists and Palsgaard application specialists forming dedicated groups to match the exact needs of each specific project. Our projects may focus, for example, on how processing resources are best utilised, how to manage the environmental impacts of food production, or how new or improved products and production processes can be developed.
