Documented efficiency High-speed whipping Emulpals® 116 is a high speed cake emulsifier acting fast in cake batter systems. Figure 1 shows a whipping curve illustrating its performance at shorter whipping times. The result shows high speed aeration as it reaches a litre weight of approx. 330 grammes after only 4 minutes of whipping. Many cake emulsifiers need much longer whipping times, often up to 10 minutes, to reach this low level. This gives the user high security for excellent performance also at shorter whipping times. For optimum baking results we advice a whipping time of minimum 5 minutes, which is the time needed for proper solubilization of the ingredients and incorporation of fine air cells. This in turn results in a cake with a fine and regular crumb texture and a nice even cake surface. Low dosage efficiency Figure 2 shows the dosage curve of Emulpals® 116. Even at low dosages such as 4% a low litre weight of approx. 330 grammes per litre is obtained in a standard sponge cake recipe. This translates to attractive cost-in-use calculations. The constant performance of Emulpals® 116 is secured by using a practical aeration and baking control test (ABC test) under very standardised conditions. This unique method maximizes the reproducibility and validity of our tests by standardising and excluding effects from disturbing factors. Due to this unique set-up, we can guarantee a high and stable functionality from delivery to delivery.
