Instant success Matching the need for speed As a high speed cake emulsifier Emulpals® 115 reacts instantly in cake batter systems. The emulsifier has been designed for high speed release into cake batters and for maximum air incorporation. This makes it possible to create light and highly aerated cakes. Figure 1 illustrates the incorporation of air as influenced by very short whipping times. The result shows excellent aeration already after 2 minutes of whipping. This proves the very high efficiency of Emulpals 115 as it gives the user ® Tolerant performance Emulpals® 115 is highly tolerant to difficult ingredients such as cocoa and egg powders as it evens out possible differences in their functionalities and will incorporate more air faster than most other emulsifiers thereby resulting in softer cakes. Figure 2 shows an aeration test using a standard cake mix containing cocoa powder and egg powder.
